You will hear the greetings on the left before you've spoken to the NPC, and the greetings on the right after you've spoken with them.

Redguard Female

"Good to meet you". --> "Nice to see you."

Imperial Female

"Greetings to you. A pleasure to meet you." --> "Greetings to you."

"A pleasure to meet you." --> "Well, hello there."

Imperial Male

"Well, hello there, a pleasure to meet you." --> "Well, hello there."

Dunmer Female

"It's so good to meet you." --> "It's so good to see you."

"I don't know where to begin. It is such an honor to meet you." --> "This is an honor."

"I'm very happy to make your acquaintance." --> "What can I do for you?"

"Welcome, friend, are you the one I've heard talk about?" --> "Welcome, friend."

"Your actions precede you, outlander. I've heard good things about you." --> "Your actions precede you, outlander."

"Greetings outlander, I think I've heard of you before." --> "Greetings outlander."

"Greetings, outlander. Don't I know you from somewhere?" --> "Greetings outlander." 1.0 had "Greetings outlander." twice like this for Dunmer Females, repeating the same audio file. In 1.1 they will just say something else. Dunmer males have two variants of "Greetings outlander."

"I've heard a lot about you, outlander. Go ahead." --> "Go ahead."

Dunmer Male

Bosmer Female

"I am honored to meet you." --> "To what do I owe the honor?"
