I have an idea for an additional option: to just tell them you don't drink & have that respected out of hand.
For bonus points, Shane offers like a soda, but also jokingly mentions the lake is clean enough to drink from; and if you do decide scoop up some lake water he laughs with you and comments something to the effect of liking your style.
Whatever it might be, just pure wholesome. Because while Shane can be a jerk at first, he's not a bad person. And Elliot is fairly respectful of people's differences, so I could see them both doing this in canon. (they mostly don't because it's such a normalized thing to drink at a toast)
there are 2 reasons why I didn't make it an actual question: First: Lack of creativity (I thought about the player using the watering can on them...) and I'm not very good with events which is why I was just glad, when it finally worked. If somebody wants to change it by using the files: Feel free. :) Second: "They mostly don't (asked) because it's such a normalized thing to drink to a toast" is basically the reason why I went for a more "subtle" way. While it becomes more common in reality that people ask, it's still not "normal". And that's why I found it fitting to some extend: Shane and Elliot don't have bad intentions with it. It's just normal behavior for them and they don't consider that the player might think different. Elliot is just happy that he had a successful working day. Shane has other things on his mind. That's why I also think the Elliot change is more fitting if one has like 2-3 hearts with Gus: After you've been to the saloon a few times, he will know you in that regard as you either never or only very rarely ordered something alcoholic for yourself. I hope that makes sense. :)

An alternative wish fulfillment version for tired people (the judgement & ...interesting inferences are exhausting). Like, either a separate version of a config.

Much appreciated. I have a farmer that, while greatly enjoying the creation of alcohol in how it can be done in so many different ways to different types of drinks and such, does not drink at all. He doesn't care to talk about it because of course, people hearing that ask a lot of questions, so he just avoids situations where he might be expected to drink or can't easily take an alternative.
And that's just me as a player. I'm sure others have plenty of reasons why they might want this sort of option, and options are almost always nice.

While people might not ask with bad intentions but just out of interest it can make people feel very uncomfortable if they don't want to talk about it. And especially if it's for more complicated reason the whole conversation after the question might be just about "that". Of course not all people are like that. And I would assume that especially Shane would understand a "No" without asking for the reasons (he knows the consequences), but I think Elliot would ask out of interest.
