Haven't really used Outfitstudio much, not very familiar with it, this modification was made with Nifskope. I can take a look at it at some point. I would guess it is just the case of removing bone weights, or/and bones from it (?).
all you need to do to remove physics is delete the NiStringExtraData branch in nifskope. No need to worry about unweighting the physics bones, without the xml there is no physics.
This looks really good but there are a few issues I must point out:

Gauntlets and Skirt Armor Rating need to be 0 and converted from Heavy Armor -> Clothing for the purposes of Mage Armor perks.
The following points are low priority and you can ignore this if you don't want to or it ends up being too much work:
If possible, add it's own lowered hood because it is inconvenient to install a completely separate mod just for a hood from it.
Maybe slightly reduce the physics on the skirt so it doesn't swing around too much. (It will look better if the physics strength is slightly lower since it is a long skirt.)
I really REALLY like this mod since it scratches my itch of having a vanilla-esque mage armor mod and would love to see these changes in future updates.^^
For the hands, I see if I can do something about it, not sure. I removed the body under the bodysuit, but I'm quite novice when it comes to armor/clothes modifications, I guess hands are working differently (?).
Physics reduction, I might look into it.
Armor ratings and such, not really familiar with that stuff, not sure if I will mess around with that. But I think that could be changed to whatever you want for the Darkness armor, with Skypatcher. https://www.nexusmods.com/skyrimspecialedition/articles/6088
Hoods, there is few mods to pick from for lowered hoods, don't really see reason to implement them here.
EDIT: Regarding the hands; This is my guess, but the gauntlets itself aren't gloves, so technically your character isn't wearing gloves, so the hands are displayed under the bodysuit. Again, just a guess.
So it might be a keyword that defines that stuff, or maybe equipment slot? If I remember right, slot 33 is gloves, the gauntlets use 34 (forearms). So my guess is, adding slot 33 to the bodysuit, (with Skypatcher) might do the trick. Or adding/making the gauntlets use slot 33, or just simply wearing other gloves with the bodysuit.
I have been intending to look into Skypatching stuff, but just have not had time to dive into that rabbit hole yet, busy with other thing in terms of modding. But if you have time, I would suggest looking into it, not sure when I will.
Armor ratings and stuff can be changed via SSEEdit. It's all about changing keywords and numbers, nothing too complicated. I can change them myself for now and post it here for you as a future reference in case you want to find out how I did it. Alternately, as you suggested, a similar effect might be possible via Skypatcher though I'm not very savvy about that one yet.
