Well, I'm gonna guess that 10mm pistol is from a mod called, "10mm Anims." Which has simply been hidden, sadly. And there's no such thing as big guns animations so that minigun is just vanilla, (wish there was tho.)
The animations are nice, but what interests me the most is the recoil camera shake. I haven't seen something like that before, and would like to know where to download the mod that does that, so if anybody could shoot me a link, that would be great.

Yes, When player equiped a rifle , all NPC will casing like rifle. But it doesn't so important, because the npc casing is difficult to notice by player in combat. More important thing is your fps shooting experience.
It should. This mod seems to just affect trajectory and doesn't touch meshes/textures.
If you're concerned, load up this mod and Armament in FO4EDIT to view any possible conflicts. From what I see on this mod's image page, I don't believe you have anything to worry about regarding conflicts.

"Pistol1" GIF seems to be xCADAVVER's "Another Deliverer Reanimation", but I'm not entirely sure, it could also be Fiddler's "Deliverer Animation Replacer"
"Pistol2" GIF is xCADAVVER's 10mm Anims
"BoltActionRifle" GIF seems to be zestoflemon's "BF1 Hunting Rfile"
"Rifle" GIF is xCADAVVER's Handmade Rifle Reanimations
"Shotgun" GIF is Rohnald's "Vaniilla Reanimation Projects - Combat Rifle & Shotgun"
The method (google it) used to obtain the links to hidden mods relies on Archive.org, so go throw them a few bucks if you can :)
