well, sadly i don't think a mod like that exists, but you can try Healthy animals on godfellas discord server, at least they have some fur to protect them on the winter

For other creatures I use an edited version of Winter Wildlife Creatures.
For the ghouls I use Fallout 3 - NV Feral Ghouls Replacer but I replace the red ones with the textures with the pale one
