You can replace any vanilla models this way, as long as you know the file path for the meshes. I used BSAopt to unpack "Skyrim - meshes.bsa" to find the model for the woodcutter's axe
This looks fine to me, looks like a cross between a Francisca Throwing axe and a bearded axe! Armchair experts don't know everything it seems. Billy it's absolutely fine and completely lore friendly in the game and in an archeological sense as well.

Open the esp in the creation kit, change something (anything), change it back, then save as a special edition mod.
Port the mesh to SSE:
Download SSE nif optimizer, run this mod's mesh (meshes\billyro\legacy\axe.nif) through the SSE nif optimizer
Do both of these and see if it works
