Autocentering is like when you're riding the horse and you look around - when you let go of the gamepad's stick or stop moving the mouse, the camera returns to center. Automatically.
FOV stands for "Field Of View" and it basically means how much "peripheral vision" do you have? E.G. An FOV of 60 will be mainly focused on what's right in front of you, you will have to turn or look around you more to see what's off to the side. An FOV of 90 will let you see more "peripheral" vision but may also look a bit fisheyed (like when the moon is in the corner of the screen and looks stretched out vs. when it's in the center)
