For me, I was hoping to use this to fix what had happened to the Mystic River quest. For some reason, the 2nd shipwreck chest near the she-troll I couldn't open and I think it's because you need the key from the first shipwreck? This seems to have disappeared from my inventory though and I can't see it listed in the XML file either :(

EDIT: Found it! Need to add this line: <loot_entry name="Petra Sillie Captain's key" chance="100" quantity_max="1" quantity_min="1" respawn_time="3600"></loot_entry>. Looks like I will need to redo the last part of Act 2 to open that chest then, though opening the chest in the sewers also advances the quest.
It was a little difficult, but I figured out how it works. I added Ard'aenye to the seller because I forgot to save the game with it in the inventory in the witcher 1. Thanks to the author and all the best in life
for anyone interested, this mod works fine, just few simple steps: 1. copy mod file to given directory (witcher 2 main folder/cookedpc/items/) 2. edit file with notepad 3. use search to find an item You are looking for and copy the whole line with it 4. seach shopkeeper You want to edit and add copied line to it 5. save file and launch the game that's it ;) for anyone interested in nekker warrior blood(like me) it's named elder nekker blood ;)
So hear I am doing a play though in 2021. In case anyone was wondering, yes this mod still works-ish. I found this mod because I'm doing the encrypted manuscript quest in loc muinne, I needed nekker blood. When I added an items folder in cookedpc and pasted def_shops.xml presto, innkeepers have a s#*! ton of stuff. if you look at the code all the items are given like 100. But because all I have done at this point is increase the current inventory of the npc I was not finished. Now we get to the less good news. If you read the instructions in add items it will tell you to find item(s), and copy it and paste it in where you want it. I was indeed able to find and copy what I needed. The issue came when it was time to paste the elder nekker blood(what its called in the files). When I open def_shops it takes me to a browser. Unfortunately you cant edit anything in the files through the browser. So I cant paste elder nekker blood into the relevant npcs inventory. It is very possible I messed something up on my end. I'm just going to continue the game without completing the quest because I'm playing it for the story not necessarily completion. The reason I bring this up at all though is hopefully it will help someone. Maybe if the stars align, someone who is knows whats going on will realize my mistake and be able to offer a solution for anyone in the future who made my potential mistake who wants to complete the quest and chose iorveths path. I guess that will only be the case if I made a mistake. If it's just because the mod was intended for windows 7 or something then f in the chat. I hope this helps you future Witcher. I know this is like a year too late but you need to open the file in Notepad or Notepad++. Basically your computer has defaulted to opening XML files (def_shops) in a browser where it's essentially read-only. If you right-click the file and select Open With and then choose Notepad or Notepad++ then you can edit it. Note: Notepad++ does not come pre-installed on your computer. https://notepad-plus-plus.org/downloads/
After adding this, the innkeeper in chapter three still didn't have Nekker Warrior Blood, but was able to add it to The Incredible Lockhart's inventory
