There is a UI detect effect for Reshade. It has two parts, the first part must be loaded before the filters and the last part after the filters. I'm not sure where you download them.
Since ReShade basically acts as a filter on top of the "game window", the shaders used also affect UI elements, which in this case means that the UI elements (including fonts) also get the "oilified" touch. I've now added this information to the guide. Nevertheless, here are a few suggestions that might help you:
You could reduce the strength of the "Oilify.fx" effect. In-game press the "Home" key to open the ReShade GUI. Then click on "Home" in the menu bar of the ReShade tool - you will see a list of shaders. If "Performance Mode" in the lower right corner of the ReShade tool is checked, click on "Performance Mode" to deactivate it. Below the shader list there is an area where you can adjust the different values for each active shader ("Performance Mode" has to be deactivated for this area to show up.) If it isn't expanded yet expand the "Oilify.fx" shader by clicking on it. Then click on "Preprocessor definitions" if it isn't expanded yet. In the "OILIFY_SIZE" field, reduce the value by 1, hit "Return" or "Enter" and see if you like the result. (The value I use for this preset is 7.) If you still don't like it, reduce the value by 1 again, and so on. However, keep in mind that this way you could completely eliminate the "Oilify" effect. (Don't forget to turn "Performance Mode" back on when you're done.)
You could toggle between ReShade and Vanilla mode if you have trouble reading something. In-game click on "Settings" in the menu bar of the ReShade tool. Then click on the the "Effect toggle key" field. Hold down the "left Shift" key and press "F". Afterwards click somewhere outside the ReShade tool. Now you can easily turn on and off the shader effects by pressing "left Shift" and "F" at the same time.
If you want to use this ReShade preset without the Oilify shader (e.g. because of the colors), you could disable the Oilify effect completely. To do this, press the "Home" key to open the ReShade GUI - then click on "Home" in the menu bar of the ReShade tool to see the shader list. Find "Oilify" and uncheck it.
Even though neither of them provides a perfect solution to exclude all UI elements from being affected by other shaders, the following shaders might be of interest to you:

I would love to try this out, but not sure if I want to commit to it yet. Any chance we could get a video to showcase the changes? Only reason I'm hesitant is because I have a pretty massive build that I don't want to bog down. Thanks!
Just download it and test it out. You can always uninstall the mod at any time if you don't like how it looks. It won't break anything in the game and basically just acts as a filter on-top of the game window.
