Actually DICE was probably on the right track of using the more pale Zabrak since Dathomir was attacked by the Separatists and later again by the Empire. The red/yellow pigmented Zabrak are ones raised on Dathomir and usually have more heavy facial tattoos. But most of the Zabrak species actually come from their homeworld of Iridonia; these Zabrak (also called Iridonians) are more human-like with pale skin and much lighter facial tattoos.
The Zabrak in the game is likely a remnant of the Dathomir Zabrak. There were those from Dathomir with more yellow-like pigmentation (such as Savage Opress). In comparison, red-skinned Zabrak such as Maul were far more uncommon.
eleglas is correct. Yellows and Oranges are far more common among Zabrak, with Red being far more rare. So seeing yellows and oranges would be far better in my opinion.
Normal Zabraks from Iridonia, however, would usually have simple lines and very little usage of black, with the occasional color marking without being overbearing. SWTOR and SWG are great examples of the variety of Zabraks.
