You can currently only use one file, as explained in the description, because there are 10 replacements per pack, and each pack replaces the same files, so all you are doing is overwriting every time you activate a pack, you are not adding all 40 posters.
Yes, you can do this as long as you copy the same file structure in any of the RAR files on this mod page.
If you want to mix and match the selections, the best way for you to do this, would be to:
a) download and unpack them all into a completely different folder from Starfield (for example, create a new, working folder, on your desktop), and use the built in Windows "image preview" feature to see what poster images correspond to the file names and folder structures. b) create a new folder, and begin to manually build up the folder and file structure one by one following the same format in any of the four selections you have downloaded. c) of the selections that you have downloaded, find the images that you want to transfer into your own, custom selection. d) following the file names and folder structure you are creating, manually, to mirror the ones I have created; e) rename the files in your custom selection to match the file names in an existing selection, so that you do not have duplicate files.
Providing this for you will not help, as if, of all of the selections you use, you have two or more images from the selections with the same folder structure and file names, you will have duplicate files anyway and it won't work - the game will not load these files.

If all you are asking for is the file structure - well, you already have this, and can view it directly in Windows yourself!
Honestly I would have loved to have been able to just release them as a pack of standalone posters, but until we can create new ID's in the Creation Kit, that is much more difficult!
This is a) a great idea and b) a great selection. I look forward to the Creation Kit when you can make a pack that includes all the posters and aren't limited to doing one-for-one replacements.
Thanks for actually tasteful posters. The AI-generated stuff is so bad.
I'm wondering, would it be possible for an end-user to curate their own favorites from the four sets into a custom collection by carefully renaming filenames? I assume there should only be one instance of each filename in the mod, and that all the posters are of the same dimensions, so posters could theoretically be swapped around / subbed in by just changing their filenames?
It is difficult for me to do this myself because essentially I would need to create 40 individual files and provide a guide for others to follow. The guide isn't the issue, but the 40 individual files definitely is.
I have also considered re-releasing some of the selections under different "styles" for example - the most colourful posters, or the "ones with aliens in".
However, essentially, what you've suggested is possible.
You can download all four selections, and you will be able to preview the images yourself to find the corresponding file name for the posters you want.
I replace 10 vanilla posters, so as long as you select 10 different images, and ensure that you do not duplicate a file name or folder structure, yes, it is entirely possible for you to pick and choose the images you use.

A lot of my favorite are all in Chemposter07_color.dds, can I change some of them to Chemposter08 or others without breaking the form?

Hopefully this makes sense!

I used a mod on here to open the files - if you look in the credits, you will see a link to the mod / the user who created the mod.

Good enough reason for you? XD
