No, normally you can't change biometrics ingame anymore. Though as I descriped on my frontpage, you can make it work by using the character editor via console command "SLM Player 1"
Simply open your console with the ~ oder ^ key, depending on your layout. (above tab)
I previously started the game so I thought the save wasn't showing because of it. I removed all my saves (it was just 48 min in so no biggie) but the save still isn't loading. I pasted the .sfs file directly into C:\XboxGames\Starfield. When I start the game the "load game" is greyed out as in there's no saves to load. Any idea?

Pro Tip: Use leading zeros in the file names. 01, 02, etc etc. This will make them display in the correct order.
