   Is it possible to only install a few of the hats with the content patcher files? I don't want the skeleton mask or bowler hat, for example; but the trucker hat, miner hat, and straw hat look much more appealing modded.

      The only way you can do this is to edit the .PNG file and edit in the ones you like. Here, I've done it for you. :)

      Put this PNG file into Stardew Valley/Mods/[iKeychain] Simple Hat Edits/assets and replace the file and you're done.

   I do like the small edits but can i pick which hats I want to keep and which hats I want to remain vanilla? For example, playing as a female char, the pink earmuffs is cute but playing as a male char, I want it to remain blue. I really like the edit on the miner and the straw hat and want them to remain in both male and female playthrough.
