I'm not familiar with Minecraft's carrot mode. Does the "permanent" increase in stamina decrease with repeated food consumption or is it truly permanent?
I have an issue, the bottom text "not eaten yet" gets in the way of the description, sometimes there is no way to see how much stamina or health you will gain by eating the food due the message being in the way. A solution would be replacing the text with a small icon like a fork.
Could you give a visual example of what an override looks like (triple shot espresso anyone? LoL) Do you use it's name or it's number? And do you have any plans to integrate with GMCM?

Two things I want to make sure of. -What is Stick mode? -What are the details of the disadvantages of eating the same food in succession? This mod corrects monotonous eating and makes SDV even more fun. In addition to this, it would be interesting if eating caused positive effects. (Another Hunger mod by another author is it like. A good buff will occur when it is close to the fullness value.) HungerOverhaul, BetterThanHardcoreHunger... I enjoyed both of them...
Love this, thank you for your service. It's not a hard problem for the user to solve, but I'd argue that coffee should be in the exceptions list by default given that it recovers next-to-no energy anyway and will usually be spammed once the player is growing it.
