This probably works in 1.6. as such, just telling it needs to "migrate" (I'm just having this on my test run, and made the small change so it won't need "migrating"). I hope I have time to replace this with a rework that is less similar to the vanilla version, and has also a variant for the extra bundle (movies)

For the record: there actually aren't big changes in the foraging bundle (someone thought the mod did not have effect): look at the spring foraging bundle, if there's spring onion, not leek you have this, also winter one has holly replacing crocus)
There is nothing to configure. You need to have the mod in your Mods -folder when you start a new game (and select "Normal Bundles" or whatever it is -- not remixed).
Nope, as this mod gives a fixed set of alternatives (replacing the basic bundles, not remixed). It is some times since I made this and I don't remember if it has items not available the first year (and as the bundle items are referred as numbers and not names in the code, it's tedious to check...)
does this mod need to be installed before the inspect the community centre quest or anything else? I had it intalled before I started a new save and it worked fine, but now that I have a new save, I'm trying to change the bundles but the mod is no longer working for me. Does installing it after starting the community centre quest line cause the mod to not work?
I have not tested that, but I would not recommend to trying to change the bundles after you have entered the CC with Lewis. I don't know the exact mechanics, but It may well be that the bundles are set at that point (or even at the start of the game as you choose normal or random ones), and so changing that later may cause a mess.
At what point you have installed and uninstalled the mod? Have you removed the mod after CC has come available or before it? I don't know what might happen if you try to change CC mods after the bundles have become available. Sounds peculiar that it would prevent the scene, as it is should not make any permanent changes before CC opens. Could you send your SMAPI log so I could see what has happened. (https://smapi.io/log)
Now I don't understand. First you said you could not get the community center opening event and then you say you uninstalled it after accessing the CC. I thought the CC opening event meant the one where you come to the door and go in with Lewis for the first time. I could guess installing or uninstalling a mod making changes to bundles after you have visited the CC for the first time and the visited the Wizard (getting access to bundles) could mess the bundles. I took a glance at that log (it would have been simpler to post a link to it -- you log has an unique url after you've pasted it -- instead of sending it as a private message -- and then somebody more experienced than me could have taken a glance, too).
The code for basic bundles has not been changed, so this should be OK (I'm just myself testing another mod affecting bundles, so I don't have this in a run). Might later develop this to have alternatives for the remixed ones, too. (there is currently a SMAPI problem causing a glitch on bundle names on translated versions. Instead of e.g. "Spring crops bundle" it may say "1 bundle". That's blah but should not break the gameplay) (Edit: Fixed typo reversed the meaning ("not" missing) and added some elaboration.
Are the bundle rewards (I mean the small ones for finishing a single set, not stuff like the greenhouse and mine carts) the same as in vanilla? I've been looking for something along the lines of 7yearsofbadluck's bundle overhaul but the CP version isn't working anymore and I've already done Minerva's overhaul. Randomizer is buggy.

I have changed some of the single set rewards. Forage bundles other than winter give mixed seeds instead of wild seeds and specialty fish gives a worm bin instead of Dishes of the sea.
