It's not because you already had the horse, that's fine. Have you already changed the color in the config.json file? The default value will be set to "Yellow" with the saddle enabled. You will need to edit the file and then restart the game to apply any changes. Additionally, if you have Generic Mod Config Menu installed, you can change the color in game through the mod config menu.
This stopped working for me at a point, but it's a really adorable mod. I keep checking back to see if it's been updated. This deserves way more exposure than it has.
