You'd be correct. It's a matter of how you interpret the sentence. As stated in the description, I just wanted to make it a little less ambiguous for myself, and figured if it was something that I wanted maybe others would want it too. Do I really think ConcernedApe was trying to imply that poi was invented by birds in the Stardew universe? No, I don't, because that would be kind of ridiculous. If you aren't bothered by the line because you read it the way you do, then great! It just means the mod wasn't made for you to use, since you don't need or want it.
I get where your coming from but this is a fictional world and Pio is from Polynesia a chain/group of islands, in this fictional world Ginger island could be a part of this version of Polynesia. Cultural sensitivity is good but you need to allow worlds to use real word things to ground themselves.
I'd go as far to say a better mod would be like more diverse Stardew valley and make Leo more clearly Polynesian allowing him to represent indigenous people of the area and giving the world a little more diversity and allowing the world to feel more real.
Poi is from Polynesia and mango sticky rice is from Southeast Asia, which are hardly alike culturally. So using both as means to "ground" an island of birds, turtles and frog is pretty weird.
Personally, I'm in agreement with @DolphinIsNotaFish. The two dishes aren't from the same cultural or ethnic groups, they're just both associated with island nations and tropical ingredients. If ConcernedApe intended for Leo to be essentially Polynesian (which judging from his dialogue referencing a life before he washed ashore on Ginger Island, isn't true) then there would be an entirely new problem having an Indigenous character with several lines worth of broken English and being raised by birds. As far as I can tell, DSV doesn't make changes to Leo's race, probably because of that issue. However, this mod is made for anyone else like me who was bothered by the line but still prefers a mostly vanilla experience, so I wouldn't want to require a more expansive mod like DSV anyways.

What's stopping these super-intelligent fantasy parrots from grinding some taro to paste and serve as baby food for Leo? They don't even need to invent these dishes, this island is used by pirates from all over the world as a hub and parrots can easily exchange culinary cultures.
If you don't like the mod, don't get it. Simple! No need to leave a comment on the mod author's page saying why you don't think their mod is necessary or if the premise of their mod is unproblematic. Simply move on.
Honestly I find the writing as a whole for Ginger Island to be a little uncomfortable, so I appreciate that a mod like this exists. Thanks for sharing.
No problem! I haven't played in a while and I started a fresh file for 1.6 so when I actually get to it I'm sure I might make other vanilla+ style changes in the future which may or may not get incorporated into this mod or this mod may get bundled into something new.
