Sadly I have confirmed (As of 12 - 26 - 2024) that this mod is NOT WORKING in Stardew Valley 1.6+ :(
This is due to "Content Patcher Animations" not having been updated for 1.6 and it looks like it may be that way for a while. Spacechase0 is working on a fix but they are a very busy person so I wouldn't expect it any time soon. As far as I know there's nothing I can do about animation mods until then. I'm sorry!

No sorry… It will only be accurate with normal vanilla shops. If the day is extended at the end of the day it will be accurate from 6am-2am. I don’t know what will happen at 2:01 am. Let me know what you find out!
Yes there is a guide on how to do this on the description for the UI mod. If you open up the config.json you can edit from there or you can use GMCM in game to edit which portions you want.
EDIT: If you have this mod downloaded, it overwrites the relevant components from my deluxe UI mod. So if you have this downloaded you'd want to make any edits to the config here. I would recommend using the Deluxe UI mod and doing the config options there because they are more easily controlled with GMCM.

UPDATE 02-05-25: There is a temporary work around up! Thanks to IkarosHDD for pointing this out!
