I know it's going on 2 years later, but just in case and for others, because I love this game... You are most likely not finding it because the folder is traditionally hidden. Find "File Explorer Options" in Windows10, select the top "View" section, click "Show hidden files, folders, and drives", naturally end the process by hitting "Ok" or "Apply". Now go into your C drive, select Users, then whatever you named your computer like "Mark's Gaming Laptop", and in that folder you will see AppData. In previous Windows versions, if I remember, you just need to find the "Control Panel" and then "Folder Options". It's fun to replay with the available custom potraits, I only wish there were more. (And don't forget that StarCrawlers: Chimera is out. Two thumbs up on that one too, though it's stil in-development.) Hope this helps. Happing imagination time.
Edit PS: Please keep in mind many files are hidden for a reason. NEVER change or delete a (hidden) folder unless you, in the very least, check with the internet first. There are literally sites designed with the theme, "Is it okay to delete?"
