If you want to see what textures an outfit use you can open it in nifskope . I took a screenshots to show you . In nifskope open the "BSTrishape" and go to the " BSShaderTexturesSet" there you can see all the textures assigned to a meshe and the textures file path .
In your case since you want to change the color of the textures you will need to edit the first textures listed , so : "practical_pirate_alt.dds" you can see that this texture is located in this folder : textures\new dungeon\Demon slayer . so now you just have to find this texture in the Demon slayer folder and edit it as you like .

But I do have a question. I came in with a squad of followers, and we all took out the big mob of skeletons and the boss at the end... but I never got a notice that the dungeon was cleared. There isn't any other boss besides Eravos the Undying that has to be killed for the dungeon to be considered cleared, right?
Also took the armor back to try it on! It's definitely some of the best-looking heavy armor I've ever seen in the game, especially when worn on a woman. I'd actually normally prefer to wear the male version of the cuirass on my female character, since I generally prefer less... aheh... chest-y armor. :) But a cuirass designed for the male body also looks odd to me on my female Dragonborn, so I'm going with the chainmail version of the female cuirass for now!
(And I'm sure there must be some way to adjust the proportions of the male cuirass in Bodyslide or something? But I don't know how to do that, so I'll just run with the armor as given!)

I'm really happy to hear that you liked the dungeon ! creating it took me a lot of times and required a lot of work but i also had a lot of fun creating it haha x) !
Yes Ervaos is the main boss if you killed him and his minions you finished the dungeon ! Don't forget to check the two rooms before the loot room where a journal and a few notes are located. =p
Yes you could try to load a preset with the femal M cuirass in bodyslide but i'm not sure it will looks good since the femal M cuirass doesn't have breasts so loading a random female presets could looks odd i think .

I'll keep an eye out for the update! Right now I'm running a custom modpack that wasn't put together by me, but I'll definitely look to run newer versions of this in future playthroughs!
The dungeon is located near the entrance of dayspring canyon . I add you a map screenshots to show you , you should be able to see the cave icon on your map as an undiscovered location .
