I noticed this mod's plugins "Chocolate Poise Plus AIO - Adamant.esp" and "CPP Blade and Blunt Addon.esp" do NOT have the original Chocolate Poise's plugin "Chocolate Poise - Perks" as a master. I believe this was not intended right? As you say this mod should override the original, but this makes it so it's possible for this mod to be before Chocolate Poise in the load order if we aren't manually tweaking the load order.
Yea I should mention somewhere that if you install my mod you should delete the ESP from the original chocolate poise mod. I don't want to make it a master file in case the plugin gets altered or removed in future updates.
I am aware of this issue and discovered this bug myself too, but to be 100% honest I'm pretty burnt out on Skyrim right now and don't want to touch the game at all. If I get back to it again I'll look into fixing it.

Would it be possible to get a little plug in that reduces poise damage on block by a significant amount? As it stands, the only way to mitigate poise damage when blocking is to download the blade and blunt expansion, or use valhalla combat
In case anyone else is bothered by the same thing: You can select the blade and blunt option in the fomod without actually using any of the new esp or blade and blunt. Doing so installs a .ini file inside the chocolate poise plus file that distributes the perks that reduce poise damage when blocking. Maybe im an absolute schitzo and this breaks something, but it seems to be working as intended for me.
Sorry for delay. I'm paired with Ordinator and Wildcat (Patch for Ordinator), some perks are activated in Ordinator with the patch and i'll have problems pull out?

If you want to completely uninstall Plus Combat, then I would say it is not safe to uninstall mid-playthrough. Wait until a new game.
If you are using the Blade and Blunt addon, then it's probably safe to uninstall ONLY the addon (keep Blade and Blunt itself)
If you are using anything else, then it is likely safe to uninstall mid-playthrough.
