    So what happens when they are friends? Nicer dialogue? I haven't ever actually done those quests before

      When you sell a resource to an npc in vanilla, I believe their disposition changes to friend. This means that taking food and coin off their tables will no longer be considered stealing, in addition to nicer dialogue.
