So after messing around with Blender for a bit I did make a collar only so no clipping mesh however somewhere along the process of having to grab the mesh from oldrim then edit it then convert it to SE I ended up with the fairly common I think issue where it shows just fine in Nifskope but in game the newly added and edited part of the mesh I worked on is invisible and thus see through.
With the work doing that took already That was kinda disheartening to me so I'll be taking a break on that.
However if you have and know how to Nifskope yourself the Excellent replacement mesh mod here on se and oldrim "Ebony Knight Armor" has in its optional files a mesh set with a properly setup neck cover attached to that modified model. You can copy that neck cover and past it onto a vanilla copy of the male armor mesh and boom your all set with the vanilla armor bug fixed. If you do this of course leave that mod an endorsment and give the author your thanks, as I've been trying to use that as an example of the proper way to edit and port meshes I certainly have!
I don't know if this is the mod Soluslupum is talking about but Knight Armor - Ebony Armor Edit has a fix for this and a patch for custom textures (plus other edits for the ebony armor)

It's perfect, just tested it with Enderal SE

Good job, now i can fully use my favourite armour set
Remember boys, clipping and mixing armour is bad, no matter how good is it quality
