I guess I've done something wrong on the install, but I'm getting a CTD any time I try to open any menu. The game loads, I press ESC, CTD. I have SKSE downloaded. I got the Anniversary Edition because I haven't downgraded my Skyrim. Do I need to have actually purchased the DLC?

I am having the same problem, I have followed the guide with a damn magnifying glass. I even tried fresh install with just skse64 and alternate start. near instant crash when trying to open any menu. Has anyone found a fix? Please for the love of Metallica.
Ok, I've been having the same problem and I just fixed it after spending the whole morning on it, lol.
It seem that it was as simple as I got the wrong version sse engine fix. You need: "(Part 1) SSE Engine Fixes for 1.6.1170 and newer-17230-6-2-1712813573.7z"

I had the one from essential bug-fix collection.
If that doesn't work for you, while testing I also installed all recommended fixes from here https://wiki.nexusmods.com/index.php/Skyui_Skse64_installation_guide except for the widesceen one. Just in case It was a combination of problems.
