There are no differences between the models in both SFCO versions. They differ only in the method of the implementation of these new models into the world.
The good thing about the newer (BOS) version of SFCO is that it needs less patching (almost none for the furniture) than the original one. I was able to get rid of all these combo 3DNPC + Immersive Citizens +SFCO combinations after switching to SFCO3.
