Pretty cool although it will obviously need consistency patches with anything that changes alcohol item effects. I made a couple consistency patches if you want to include them. One is for Requiem and one is for Jack's Reqtified Cooking
Its using BOS so mostly vanilla items should be fine even if that is added by any other mod, but any mod adding new item which uses vanilla meshes will look odd, might need consistency patches. And yes if any mod changes alcohol effects, then the replaced models will loose them.

Yup thats the purpose, it will only use TMD's replacer in cities and indoor locations. Dungeons, wilderness etc will use whatever other models you have.
