Please make sure to gimme a little description on how the quest normally starts, or about the follower so I can try to make a trigger that makes some sense. I can't be bothered to try out each and every follower mod
small suggestion: perhaps a list of quests affected either in a pinned post or in the description, so people don't recommend ones they simply don't know have been done (or suggested) yet.
Or perhaps there is and the base mod only affects taliesin so far?

Could you prevent Companion Valfar's quest from starting at the beginning of the game? He is a Stormcloak and he is at the Throat of the World so maybe a note at Ivarstead would work.

Good thinking! I think there might be a patch needed for Environs - The Shrines of Talos, which adds a patch of its own for Taliesin that makes it so the quest does not start until you go to the shrine after killing the dragon at the watch tower.

Their quest starts suddenly when you approach Windhelm the 1st time in a playthrough.
