It should in theory; all this does is change the font files. It may however require a Spanish translation due to one of the files being transcribed in English. You can still give a shot though.
The reason there are so few fonts for Skyrim is due to this fact: most fonts are massive in skyrim and overlap regardless of how condensed the font type is. Its not so bad if you have a large monitor, and even less so if you set SkyUI's font preferences to 'small'.
Just set SkyUI font size to 'small' as there can be some bleeding due to the size of the font. If you have a massive monitor tho, you shouldnt see too much.

Sadly, the SkyUI's preference doesn't affect most of the menus.
