Every single one of those things you list, balmz, would fall under the purview of Destruction. Alteration doesn't just change things on the fly; it changes the properties of something (whereas Thaumaturgy, which mostly got fused into Alteration and Mysticism in Morrowind, messes with the rules of reality, allowing flight, teleportation, walking on water, etc.). It changes matter on a fundamental level. It doesn't slice people open, or rend their armor. It doesn't stitch people and things back together, either.
Destruction: causes avalanche Illusion: makes mountain pink Alteration: changes the type of rock mountain is made of Conjuration: summons atronach the size of a mountain, or binds the spirit of the mountain Restoration: heals the people and creatures messed up by all these other lunatics Mysticism: makes everybody dismiss the fact that the pink mountain exists Thaumaturgy: makes the gravity on the mountain reverse, or double
I like those ideas. I'll have to do some digging in the CK and see what kinds of spell effects I can mix around to make something close enough to those. I do kinda see what HlaaluSlayer was saying though, but I find the current alteration tree in skyrim to be lackluster and somewhat gimmicky. I want to be able to simply main in alteration alone without having to delve into other trees in order to do battle.
When I think of alteration magic, I think of shifting reality. But why can you not do this to the end of damaging foes in skyrim (besides paralyze but that spell is practically useless without destruction or a weapon).
I can't make any promises because I just got ESO (finally) and my day consists of whatever I'm in the mood to do, but I will screw around in the CK and see what kind of weird s#*! I can come up with.
I personally think its a great mod, the only thing I can think of is, and let me know how this works for you, when you paralyze a target thats slightly above your feet and you crouch...hit target a second time and it will fly a few feet lol by target i mean NPC,animal,etc.

do you take requests? i have ideas for some alteration spells that would work great
inflict bleeding: you use telekinetic magic to cause the target's flesh to rip open and cause bleeding damage
inflict mass bleeding : you cause bleeding to a bunch of hostile targets in an area
implode: you cause the target body to collapse dealing damage
MAss implode, cause implode effect on many targets
Crumbling: you cause the target's armor rating to be lowered, target takes damage equal to rating lost
mass crumbling: same as above but affects many targets
