Howdy, Could it possibly be interfering with the spell animation? There shouldn't be anything in the character generation that would cause that, since she's pretty much just an ordinary follower. I'll see if she does the same thing in my game.
Evidently you must have some body skeleton issue because she has both hands in all of my test runs. I have her downloaded on 2 PC's here at home and she is 100% normal. Do you have the "better female hands" mod? That could be an issue, but I'm not sure. You can find out by disabling any mod that changes the hands.
You might try dismissing her and re-downloading her. Her hand may be there, just not rendering in game. You can tell by having her shoot with a bow. If the animation of the arm with the missing hand looks normal, then she has the hand, but it's texture is invisible in game.

I didn't Read this Literally as a "One Handed" Follower..I took it to Mean One Handed Weapons..Why do Some People have to be so Awkward and Continuously Complain about the Slightest Thing..IF He/She is Unable to Understand,then perhaps He/She should Make His/Her Own Character Mods and Stop Bothering Others..I shall Download this Follower Mod....I Appreciate ALL the Work,people have put into Mod Making,it is Something I Would Not be Able to do and Thoroughly Enjoy Some of Them....As for People who Complain Needlessly,Well I won't Put my Thoughts into Print....
I'm glad they're NOT drop dead gorgeous -- there are too many huge ( . ) ( . ) and perfecty-plasticized women followers here in Nexusland. Time for something different! (And might I suggest possibly making an attractive *male* follower? Those are even more rare 'round these parts! hahaha) ;^)
