Might I suggest instead of changing the response you've got different responses to choose from? Sure they do the same thing but this way there could be a varied response to reflect how the player might feel about discovering they are Dragonborn.
1.) Ysmir's beard! I'm... Dragonborn?! 2.) You must be mistaken! I couldn't be Dragonborn, could I? 3.) I'm what?
Oh my gosh! Khajiit style responses would be so COOL! Someone needs to make a mod that changes most if not all player dialog options to fit specific races. Download one for Khajiits, one for Elves, Nords, Argonians... All of them would be epic! The Khajiit one would be the most fun though.
Great Idea! I won't download it however (I'm getting pretty close to the max amount of memory allocation so I'll just have to deal with the vanilla response for now). I do have a suggestion however. First of all give some other dialogue (still in the same style) and one optional one that is only unlocked if you have read about the dragonborn before starting the dragonfight or if you have requested the song about the dragonborn from a bard. Something like: "Me? The Dragonborn? You MUST be kidding!" (I'm pretty sure you will find something way better) or perhaps a more arrogant response as well (I like to roleplay). Anyway I might come back to this mod from time to time, see if there have been some developments (except if it is already finished of course).

First they made me a rebel scum, and now this.
