I've tested this mod thoroughly, but there might be some rare instances where the innkeepers heading to bed could break a scene or something. If anyone runs into something like this your report would be greatly appreciated!
Also worth mentioning that the placement of some bedrolls will probably be adjusted a bit in the next version - user feedback is also appreciated here too.

Currently implementing secondary innkeepers that will take over while the main one sleeps. I hope to use existing NPCs for this role but the land of AI packages is a confusing one where there is a lot of potential for things to get intertwined in a bad way so it might not be feasible in the end.
2014-05-28 At the moment I'm burnt out on skyrim modding, so my work can be assumed to be in its final state. However that's not to say there won't be future updates, just to warn that you shouldn't expect them.
I thought we'd just be able to wake them up, since you're supposed to disturb NPCs anyways. I find myself being forced to break into people's homes almost every time I turn in a quest.
For some reason my inkeepers don't sleep in their bedrolls and instead wander off to one of the inn beds. Not a huge problem, but was wondering if anyone got a clue how to make them sleep in proper place?
I use "Bijin NPCs", which changes the innkeeper Hulda's face (at Whiterun). Using TESVEdit, I could see a conflict for Hulda's face (her "HeadPart"s), between "Sleeping Inkeepers" and "Bijin NPCs". By putting the Bijin plugin later in the load order, the issue was easily fixed. But I wonder why an inkeeper's face would have been touched by "Sleeping Inkeepers". Granted I know very little about modding, so maybe I misinterpreted all this.
Ahh, I love this. It's something I've always wondered about and missed from Oblivion, and it's awesome to see someone went and fixed it!
Now I'm up and wondering if it'd be possible to do the same to some of the beggars in places like Windhelm, since a lot seem to just wander around all night, though. 8o
