   Would it be possible for you to make a separate file for the hand-paws? I would download this mod but I'm fairly certain it's not compatible with Digitigrade Beast Races because that mod changes the feet also.

      I presume you mean THusky's Digitigrade Beast Races (https://www.nexusmods.com/skyrim/mods/51097)? It actually doesn't change Khajiit textures at all, so it's entirely compatible with mine!

   could this be made into a racemenu overlay that way this mod would work with any skin texture mod?

      I can give it a go, though I'm not familiar with making RaceMenu overlays; it requires poking around in the CK in ways I'm a bit shy of.
