Not sure about this at all. It always worked for me as long as i have the right mods installed. Maybe you are missing a specific hair mod? (from the ones i recommended)

Forgive my VERY late reply as i rarely check lately!
All you have to do is either disable the esp in the right side panel on Mod organizer or open up the mod and straight up delete the .esp file. This will keep the mod enabled mesh wise but remove the menus etc thus you can use its messes/basic presets and face parts along with racemenu!
Excuse the very long delay! They work for SE too! Tested that myself! But you will need to find the required mods for SE (since the ones that i posted here are all for LE!)
Thank you for the kind words! Saddly im not an actual modder (I dont know that much about code), thus I cannot promise that. I do have quite a few ideas for an actual follower mod but since I dont know any people irl who would help with the voice acting that might prove quite difficult
I was trully hoping to make a certain quest mod but that will never happen either most likely
