Grass textures are layered with SFO most current + Verdant dark grass short version and my ini for grass is 15 textures and 40 for min grass size. Mixed in with that are stuff from Zerwas1 4K, Vivid Landscapes, and some misc. plant and foliage mods.

My skyrim INI settings are extremely basic - things set for running an ENB, grass settings, simple water tweaks and some minor changes to decals (for some mods). Prefer simple INI settings - easier to recreate that way as I often generate new INI files because of all the ENB stuff I do.

Well I would say the main things you need are SFO and Verdant. The ground textures also can make the ground fill in nicely with the grass and foliage so I also consider them important - but don't use the SFO ones. Right now I am fluctuating with the ones I like. Zerwas1 has some nice 4K ones with Terrain Parallax. But then there are the ones from Vivid Woods (by the author of Vivid Landscapes) which are pretty nice. Cabal (AmidianBorn) also has some 2K ones in their landscape mod. I have them all pulled out and working on my favorite mix. Right now I am using both Vivid Woods and Zerwas1.
There is also a nice unique plants mod that places 3D plants. Doesn't really add to grass in any way but its a rather neat little mod.
The grass specs for my INI you already have. But here they are again since I am home now and can cut and paste (oh and I use ugrids 7):
