This probably has to do with Epic's CloudSave service. It constantly overwrites the save you've downloaded with the one Epic has stored in their cloud. Try disabling it, let me know if it works!
Yes, there is a folder with a bunch of numbers if i'm correct, this folder lets the game know that the save files IN that folder are yours. Did you by any chance replace the whole folder? If so, you only have to place the save files itself into YOUR folder, so don't place the files anywhere else besides in the folder with your ID on it.
this can be caused by 3 reasons, 1. You don't own the Deluxe outfits, if so, buy them. it only costs $5,-. 2. You placed my saves in the wrong folder, try looking through your folders (Preferrably in the AppData folder) for a Sifu folder. If it's not there, look up your save location by searching the save location path with the name of the laucnher you play on, Steam Epic or whatever you play on. 3. Disable steam Cloud save, Steam sometimes overwrites your newly played save with a save that has been uploaded to the SteamCloud
If these solutions won't solve your problem, try googling it.

What platform did you buy sifu on?
For steam it's: C:\Users\(username)\AppData\Local\Sifu\Saved\SaveGames\(yourID)
I don't know the locations of other platforms like Epic Etc, try youtuning or googling it.

edit; i pirated the game so thats why i dont have the saved games etc folder
