YES!!! I've been looking for something like this. Great work, also I don't know how, but one of the mods I downloaded for oblivion gave me the chance to get human hearts from NPC's. I don't know which one, but I'm not complaining. Great work on this.
I know I know, It was initially just a proof on concept, and making this method work with every body mod there is would really put a lot on my plate, since it would require lots of extra modeling for which I have little time to spare. good idea, I like a lot but it looks like it needs some work. I am using HGEC female and roberts male bodies with stock armor and clothing replacers. With the F-in evoblivion skins and the vascular male skins, I don't think the other main body types are even competition anymore. You should really make a new version for robert's males and HGEC bodies.
Wow! I need this thing, and I need it BAD! Yes, exactly what it does plus some extras I'd kindly ask you to add to the upcoming version. I need a possibility to harvest a dremora head and a new item never previousely existed - 'dremora guts'. And I'd like to see a script that leaves proper holes in the bodies while I'm choosing which one I'd take this time. And, yes, I'd love to see that splash of blood mentioned by another commentor! Please continue, I believe in your work!
I like pretty much the mod but nothing is perfect, yet. My feedback:
First, take off the message that pops when you harvest a dremora heart. It turns off the immersion.
When you use the spell, try to make a sudden splash of blood while the armor is changed to the chest open version. It will be a lot more immersive, and it will conceal the armor changing.
Other cool feature would be, maybe, instead of adding the heart to your inventory, make a heart drop from it's chest. So, you have to pick it up.
Lastly, the Dremora summoners robe changes to armor if you try to harvest their hearts. The same way you created a opened chest armor, you could do a ripped version of the robe.
If you implement these, the mod would be just perfect. Totally immersive, like a in-game vanilla feature.

You DO realize that our heart is in the center, right? Not on the left side... it's just, it points more to the left than to the right... Anyway, good idea though! Adds a bit more realism to the game ">
