1 minute of unconsciousness isn't unrealistic in this game. 1 real life second is about 1 minute in game. So, 60 seconds of real time is 60 minutes of game time. Sounds realistic to me.
Sativarg's ideas are good and if you learn how to allow healing the fallen npc to revive them faster let me know, but 1 min is still better than 10sec. You should perhaps consider giving a choice of how long they are unconscious like Sativarg said 1 min to say 1 hr ( so you might come back to the same cell later and find the same npc still hurt ) but you should allow the player to simply walk up to the unconscious npc and through talking to them sort of wake them up or "attempt first aid".
