I don't know if I can do something about the sensitivity, it's exactly as it was pre-Beyond. Again, feel free to make your own version if you find a value that changes it.
It allows you to steer left and right with your keyboard, so you don't have to use your mouse. Can be handy if you want to avoid the roll motion that often comes with your mouse movement. I'll modify the description, thanks for the feedback!
Steam's controller configurer is vastly superior to anything NMS ever offered natively. However, it can be set to keyboard commands so the simplest solution would be to set your keys for the turning controls, then through steam's controller configurer, set your controller inputs to those keyboard keys.
