So far using the random MT and ship, and no issues.
I just have one question, so far on different starts, I've gotten these ships.
    Hauler x1
    Shuttle x2
    Explorer x4

Each of the x# are different runs to the ship not how many ships are at the initial crash zone.

So I've noticed that you don't seem to luck out and get say a fighter, is there a tiny % chance of getting something other than the common four ships?

What was funny is that on one of the Explorer starter ship starts, there was a crashed B-class only roughly 500 meters away from the starting crashed ship.

If I use the Random Starter Equipment mod, I get an error and the game refuses to start.

First, I get a popup that says. "Unable to initialize OpenGL window."
Once I dismiss that, I get a second popup which says, "The game has encountered an error and will now shut down. Potential mod incompatibilities have been detected - please disable or remove mods if this persists." The game then shut down.

These errors occur even if Random Starter Equipment is the only mod enabled, and occur on both the Steam and Microsoft Store version of No Man's Sky.

Hope you can fix this issue soon. If there's anything I can do or any information I can provide to help, please let me know.

EDIT: Recompiled the .pak from the .lua, and the game launched fine. However, some of the button labels for the custom difficulty screen were incorrect/missing, and when I tried to start a new game from that screen, It gave me the second error message above and shut down. I tried again, this time just selecting Normal mode, and again it gave me the error and shut down. I hope this additional information helps you narrow it down.

EDIT 2: Upon Further Testing, I realized that the "Get to the Good Stuff" mod also results in the game shutting down with the second message. Guess I'll have to wait for an update.

Does this skip past any of the tutorial quests or any other quests? If yes, which ones?

you literally start off and it goes to the first signal where you get the base computer. I think that's still considered tutorial.

Also just dl try a new save you'll find out if it's what you want. Removing quests takes a little longer to do.
