For the Tudor houses, I used the textures that came with the models and adapted them to the typical usage in NWN2--a single combined texture file across the building set. That meant redoing the UV maps as they tended to wrap across sides of the individual texture files. But it worked out all right, I think. The houses were then scaled to their current size based on the size of the door openings--I wanted them to fit the standard doors snuggly. The buildings ended up a little large compared to the standard stock, but most people I asked seemed to prefer it that way.
Most of the remainder of the content uses the original texture files, although I shrank many of the files down to reduce the memory footprint to an amount more comparable to the standard NWN2 assets. For the ones I did myself, I either re-used some existing textures or obtained them from a free texture site.

I don't think I have seen this in the old IGN NWN2 vault, is this really new or have I just overlooked it back then?
Have you used NWN2 textures or is this all made from scratch? Because afaics the models can be mixed quite well with the stock houses.
