I've honestly only used this mod with troop creation so I don't know a lot, but this looks intended. You can craft these weapons, but only after you find them from tournaments, smelt them and unlock their parts. These are strong weapons, wouldn't make sense for them to be unlocked out of the door.
Now, you can easily make them all unlocked by adding "is_default="true"" all the pieces in the crafting pieces xml, which will make them available by default, you just need the materials.
Open the "run" prompt (Windows Key + R) and enter "%ProgramData%\Mount and Blade II Bannerlord\AEW" (withouth the quotes). That should bring you to the correct folder. If that folder is not there you either have not run the game with ATC enabled yet (it needs to run at least once to create the folder and the files) or you have not enough rights to create or write into that folder.

Likely an issue with any other mod you have. Also probably recommend not using the base launcher and switching to BLSE as well.
