So option 2 is basically the same as vanilla except they will have matching sword and shield? Why not add a 50% drop rate to option 2 at least? Instead of keeping it vanilla, which is 100
I feel the amount of greater or common soul gems they can drop may be a bit much. If you want it to be more rewarding than just a single soul gem then maybe there's a chance the smaller gems are filled with a random soul?
Why? The price of the heart is 200 gold. The price for soul gems is on average 200, while the chance for a grand stone is only 33%.This is a 400 gold reward for killing the strongest creature of level 20. The idea with soul gems seemed interesting to me, since there is no reliable source of obtaining them in the game, apart from merchant in Mornhold. I can make a version with even less loot, but is that fair? Or maybe you can offer another interesting reward?
You can keep it as is, I think my perspective is that of being used to not seeing multiple soul gems in creature loot. But your approach is to create such a source, which is legit. So it's all personal preference. :)
They also always get a shield, which can be made from almost any material in the game. This is not particularly critical, since the creatures in the game do not have armor and die faster than the shield runs out of durability. However, the shield is not always used, since the list of random weapons includes staves, spears, halberds and claymores. A shield with a high defense skill gives a significant advantage in close combat.
They, and this includes you and NPCs, do benefit from shields even while wielding two-handed weapons. When equipped with a two-hander, a shield is still able to be equipped and contributes to the wielder's AR (and any enchantment said shield might have) despite not being held in the off-hand of the wielder when they draw their two-handed weapon. I don't remember off-handedly what the Combat stat of a Golden Saint is, but I'd guesstimate it's around 90, so they get a pretty hefty amount of AR when wearing a Medium or Heavy shield. Not so much a Light shield, although I can't remember what their Stealth stat is to be sure, but Combat/Magic/Stealth are basically a Creature's equivalent to an NPC/player's skills when it comes to calculations. "90 Combat" equates to 90 in Heavy Armor, Medium Armor, Long Blade, Spear, and every other Combat-deisgnated NPC/player skill, in other words, while Stealth is most relevant for Creatures in that it determines their skill level with Marksman weapons, Light Armor, and detection rate (Sneak) against your ability to avoid detection (while Sneaking).
That's right, but creatures without MCP do not have an armor rating; it is always zero. Also, to obtain benefits, a shield must be equipped, but whether a creature is capable of this, having a two-handed weapon in its kit, is an open question)
Really? I should note that I'm using OpenMW, and I haven't actually checked (is "GetAr/Get Armor Rating" a console command?) to be sure they're really benefiting from passively wearing a shield like NPCs/players do. I do know they equip them since, when looting their corpses, I'll see the square frame indicating an equipped icon around their shield as well as their weapon. Of course, they benefit from Block when one-handing, but now I'm not so sure they benefit from AR since I don't know if OpenMW lets Creatures have Armor Ratings.

I assume, as with your dremora plugin, this includes the functionality of your summoned Golden saint one?
