Well, you don't expect an Orcimer character (for example) says Dunmerish "Sin'juli" to an Altmer, do you? It would be better if the player's smart and polite character says "Good Bye" in the native language of the person with whom he was speaking.
To my knowledge that is impossible, but then again I am not good at the scripting side of modding. All I did here was change a game setting (?) to the text I want, it is not controlled by a script.
There's also the caveat that there's not enough conlangs around to create enough goodbye phrases so that each of the 10 races has one.
