I was going to just have an initial look at this but ended up reading it all in one sitting. Although it's 48 pages long, with screenshots, tables, and so on, it's not as long as I first thought and only took a little over an hour to complete.
You've built up the examples nicely; starting out fairly simply and adding more complexity in easy to manage chunks. In addition, the humour you've injected made me laugh and kept me reading.
For the 2nd edition, I'd like to see (non-exhaustive list):
more on the Greetings 0-9
whether it's possible to use AIWander idle movements -- e.g. scratch head, deep thought, etc. -- in a conversation (and, if so, how to do it)
other animations in, or resulting from, dialogue (e.g. "Please take a seat.")
When discussing followers, you wrote: "... and as an added bonus if anything or anyone attacks you the NPC will return the favour and attack them."; however, I don't consider that a bonus at all. Most "escorted" NPCs have no weapons or armour, and few, if any, combat skills. When a fight starts, they seem to mostly sprint to some position between your character and the attacker, then start throwing ineffective punches: they run the very real risk of being killed by the PC, if the attacker doesn't get them first. Some discussion, prior to the journey, could possibly set some ground rules, e.g. "If we're attacked, find somewhere safe and hide." - is this possible and, if so, how to do it.

Well, thank you Otolith. Very kind words and I hope I don't disappoint you with the 2nd edition. I have thus far expanded on followers and I do like some of your points there on them and will, of course, try to include these in the next instalment. (You can read it as I write it if you desire, I'm doing it on google docs with a link on my discord for anyone interested).
More on the other greetings will also be covered but there is so much to cover and I'm trying my best to target most commonly used commands first and trying not to get too technical so your average person doesn't get bored senseless by jargon and maths.
If only "please take a seat" was an option in Morrowind :(
