I've had to get several copies for the XBOX over the years until I got a PC that could even play the game at 640x480 at over 20 FPS (For example, a Dell Dimension 3100 with a Celeron and 512 MB DDR ram with intel graphics struggles with morrowind)

I ALSO didn't realise until now that the XBOX had its own splash screens. This will be nice to throw into my existing Splash screen folder to mix with the default morrowind stuff and creatures XI splash screens.

How would one go about converting these to work on widescreen?

Hmm, lots of different ways this could be done depending on what kind of result you’re after.

The easiest would be to either use OpenMW or stick black borders on the sides to make them fit in a widescreen resolution.

There are also probably templates out there that modders have made for blank widescreen splash screens, that you could photoshop these on to. How much detail you wanted to go into with it would depend on your skills, time and inclination.

Some day I would like to upscale and/or re-create these to vanilla PC quality but that would still not be widescreen.

Another way you could do it perhaps would be to upscale them and then separate the background from the text and pictures in Photoshop and only stretch the background. Content aware stretching might also be useful.

I'm gonna try my hand at making 16:9 versions of these, we'll see how it goes.

EDIT: done the first one, let me know what you guys think:

Great to see someone working on these! :) The background looks good, what technique/s did you use?
Personally I’m more interested in getting the quality of these brought up to PC standard than making them widescreen, but perhaps our combined interests could combine, resulting in high quality versions in both widescreen and original dimensions? If you’d be interested in working on them together, feel free to send us a DM.
