I figured it out. When choosing the MGSO Options make sure the Left Glove Addon option is Unchecked. The pauldrons will now appear as they should.
ALSO - You will notice, if you haven't already, that the bound Cuirass and bound gloves are much brighter in color compared the the bound boots, greaves, helmet, and weapons/shield. To fix this, go into your Morrowind installation Folder (Directory) and run the MGSO Options application. After you select the speed of your computer, click on the "Change MGSO Options" button. Under the "Armors" section choose the Default Armors option, then click Apply at the bottom left of the window.
* If your concerned that all the armors in the game will now look like the original models from the vanilla game (before MGSO), then don't! as long as you have a save that had the armor appearance option that you wanted, LOADED when you started the game then you will be ok. The Detailed Armors will still be there (albeit not as reflective) and the bound equipment will now be consisstant in appearance.
Great mod, still works perfectly as of March 2015. I also use this to create constant effect armor and it works . Essentially, this gives you the greaves when you summon the boots, and gives you the pauldrons when you summon the gloves. So in all, what you need for the complete set is Summon Bound Helmet, Summon Bound Boots, Summon Bound Cuirass, and Summon Bound Gloves. This make is simpler to enchant for constant effect, too, since a belt and a shirt will hold all the enchantments for the full set. A must have mod.

edit: tested on the overhaul the pauldrons dont seem to be working
