Depends on which game. For LE1 it's entirely a merge mod and merges into Startup_INT.pcc. If you have a linked backup you can restore this file to vanilla, but keep in mind that other mods may also merge into this file and so restoring it will undo those mod's changes as well. It may be safer to reinstall your mods.
Thank you very much! It looks like restoring the vanilla font worked fine. As I said in the edit of my original post, I love the font, but it's displayed too big, and this noob doesn't know how to make it smaller. :-)
Fantastic mod! Thank you for taking the time to create and share this mod with the community. I can't stand Myriad Pro in a sci-fi world like Mass Effect. It's such an awful eyesore.

Keep in mind that other mods you have installed may also merge changes into these files, so restoring them to vanilla may affect the functionality of those mods as well.
Not a fan of the new/old font, but I like the idea of unique dialog wheel for each game. Would it be possible to make it standalone?
PS: Not sure if possible, but how difficult would be porting ME2/ME3 style health bars to ME1? Your planned concept does it nicely to enemy bars, can it be done to player's half-circle, so it looks more in line with sequels?
It would be possible to make it standalone, but I had to spend hours changing the hex codes of the wheel segments hundreds of times through JPEX's clunky UI and it practically gave me carpal tunnel so I'm happy for someone to use these files if they wanted to make a version without the font change but I'm not going to be doing that again, sorry lol.
