I think it looks skinny too, but take a look at Scott Hartman's skeletal (which I lined my model directly up to). Deinonychus's tail really is that skinny without feathers bulking it up. https://www.skeletaldrawing.com/theropods/deinonychus
I've used Scott's skeletals for my drawings, but even if the animal isn't feathered I prefer to beef up the tail to make the animal look less shrink-rapped and starved.
I'm using paleo-accurate in terms of body proportions, I'm not going to use a clunky name like "Fossil-Accurate Body Proportions" just to appease people who are super picky about naming conventions. And I'm working with the original model and have to keep it aligned to the rig to animate properly, so of course it's not 100% accurate (that's why the tail is stiff, I lengthened it beyond the rig so it's not animating like the original model did).
And you might want to look at Scott Hartman's skeletal of Deinonychus if you think the tail and skull are the wrong shape, since I used that directly as my reference (I literally lined up the model to the image). Probably looks weird since there isn't the coating of feathers to bulk everything up.

The skull shape is also too curved and a little too long. And is it just me or is the tail super stiff and thin?

Don't be such snowflakes.
And it is possible to model feathers and texture them. We have plenty mods that approximate feathers. You just can't do it with the shader.
This mod of JWE1 shows what can be done: https://www.nexusmods.com/jurassicworldevolution/mods/693
