Note: The Brotherhood of Steel portion of the quest is partially bugged.It runs amazing the first time you use it, but it breaks when used again. The problem resides in how vertibird respawning is handled. The sub-quest which handles the vertibird spawning is 99% papyrus scripts so I will be unable to get you a fix until GECK comes out.
In the meantime I may offer an ESP file which replaces another faction raid (say raiders) with BoS troops. That way the success of the mission is not linked to vertibirds and can be completed multiple times and you can still kill all the tin cans you want.
Love this mod. The only times I've had issues with it were when I didn't read the whole description so I didn't wait two days. I love testing out my defenses against Gunners and Raiders, even if sometimes the battle goes horribly wrong.
How far into the Minutemen questline do I have to be in order to use this mod? If I've only gotten as far as unlocking the Castle armory, would it still work fine?

It's only console command in bat file (txt). Put those under your FO4 folder where the Fallout4.exe located and type "bat DRCR" for example in console command while in game. Or you can just open the txt and see what console command is written and type it yourself.
bethesda calls them batch files, but they are actually saved as .txt files. You run these files in fallout's console by typing in BAT [filename-noextension].
Ex. Bat DTCBoS would run the commands found in DTCBoS.txt.

Is there anyway to finish it so I can restart new raids without loading previous saves and losing progress?
I've already done "Defend The Castle" vanilla quest. It works fine until it's finishing time.

essentially each bat file is just changing this global variable to different values and then running the quest.
